Here are the new pet looks that Hunters can (and can't) tame in Patch 10.2.5: Seeds of Renewal.
Most of these tames can be found in the new, open-world version of Amirdrassil, as the night elves begin arriving and setting up their new home. Others can be found in Gilneas, which is finally being recovered by the Gilnean diaspora.
There are probably some things we missed, especially if there were changes made very late in the testing cycle. If you have any additions or corrections please let us know on our forums or Twitter. Happy hunting!
The new Watchful Somnowl in Amirdrassil has 11 possible looks - 10 of which are new! While there are no actual new feather colours, these looks represent novel combinations of antler, brow, ear, and tail styles for existing colours, all of which are pretty cool!
These looks have been found on tameable creatures.
The new Wild Horse packs added to Gilneas have five possible looks, 3 of which are new. There aren't any novel coat colours, but these horses have new mane variations for existing coat colours.

This new hippogryph look has been a long time coming! It was originally created for the Emerald Hippogryph mount in Mists of Pandaria, and was only added to the wild hippogryph model in this Dragonflight patch.

This cute bakar (aren't they all?) was the last remaining unused bakar look. It has been added as a second colour to the Murkfur Alpha, which already existed in the open world version of Amirdrassil prior to 10.2.5.

Four new grey brufallon looks have been added to Amirdrassil - each a new horn and antler variant of the existing colour.

These two stag colours were the last remaining untameable looks for their model. The cool olive one has appeared in the game several times already, but only on untameable creatures. An unpatterned version of the puce/purple colour is already tameable, but the patterned one has never been used before.

This lovely olive doe was the last remaining untameable look for its model.
